Pumpkin Spice Cinnamon Chip Cookies

Without further ado, I'd like to introduce you to these Pumpkin Spice Cinnamon Chip Cookies that are perfect for all your fall festivities. Pumpkin Spice season is in full swing and we are loving every second of it. Whether you are in the mood for something sweet or need a tasty treat to bring with you to your next gathering (Thanksgiving perhaps??), this cookie recipe is for YOU!


I've had my fair share of pumpkin cookies, but none that have compared to this. I'm crediting it to the Molasses, as I've never used it in my baking recipes before. The pumpkin makes these cookies extra soft, extra tasty and extra ADDICTING.

What ingredients will you need for Pumpkin Spice Cinnamon Chip Cookies:

Only 11 ingredients are required to make these delicious pumpkin cookies!

  • 1 stick salted & softened butter

  • 1/2 cup granulated sugar

  • 1/2 cup pure pumpkin puree

  • 2 tbsp molasses

  • 1 large egg

  • 1/2 tsp pure vanilla extract

  • 1 1/2 cups all purpose flour

  • 3.4 oz box instant vanilla pudding mix

  • 1/2 tsp kosher salt

  • 1/2 tsp baking soda

  • 5oz Hershey's Cinnamon Chips

Instructions:

  1. Preheat oven to 350º F and prepare a baking sheet for your cookies.

  2. Cream butter and sugars in large mixing bowl until well combined. Stir in pumpkin and molasses, stirring until combined. Add egg and vanilla mixing to combine.

  3. Add flour, pudding mix, salt and baking soda. Stir just until combined then add chips. Stir to combine.

  4. Scoop dough onto baking sheet, placing two inches apart. Bake for 12 minutes or until baked through.

  5. Allow 10 minutes to cool before eating. Enjoy!


NOTE: Hershey Cinnamon Chips are seasonal so you might have trouble finding them. I got mine from Meijer but speciality grocery stores should also have them during this time of year.
